Quick & Easy Pasta Salad

Indulge in the vibrant flavors and colors of Tri-Color Pasta Salad. Bursting with fresh vegetables and tossed in a tangy dressing, this versatile dish is perfect for any occasion.

Ingredients

Pasta Salad

  • 4 cups cooked fusilli pasta
  • 2 cups cherry tomatoes halved
  • 1 cup english cucumbers cut in half lengthwise and sliced
  • 1 cup crumbled feta cheese
  • 1/2 cup artichoke heart quarters drained
  • 1/2 cup black olive slices drained

Dressing

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2-3 garlic cloves, minced to taste
  • 1 tsp dried Italian seasoning
  • 1/2 tsp sugar
  • 1/4 tsp sea salt
  • 1/4 tsp freshly ground black pepper

Instructions

  • Prepare the pasta according the the package instructions, drain. Toss a drizzle of olive oil with the cooked pasta. This helps the pasta to not stick together. Set aside to cool.
  • In a large bowl, whisk together the dressing ingredients.
  • Once cooled to room temperature, add the pasta and the remaining ingredients to the large bowl with the dressing.
  • Thoroughly mix and serve.
